Sauerkraut

Sauerkraut, a German delicacy thus prepared: White cabbage is shred, and placed in layers in a cask with salt, juniper, cloves or caraway or other condiments. These layers are allowed to ferment under pressure, the resulting liquor is poured off, and salt water added till scum ceases to rise. The mixture is then kept in a cool place, and under pressure, till needed for consumption.
