Gingerbeer Plant

Ginger-beer Plant, a remarkable substance acting as the fermenting principle in home-made ginger-beer, occurs in yellowish-white, semi-transparent, gelatinous lumps, and consists of a yeast plant, Saccharomycespyriformis, the cells of which are symbiotically entangled by a coiled schizomycete, Bacterium vermiforme.
